After fermentation for about 20 days, second fermentation follows on sediment from a previously made Amarone. Then a portion is aged for 12 - 18 months in wooden barrels. The flavors of ripe fruit are reminiscent of blackberries, cherries and blueberries. Tones of raisins are followed by floral and spicy sensations. Warm, balanced and well-structured.
Perfect with stews, pasta with powerful sauce, grilled meats and aged cheeses.
